It is characterized by thick soy red sauce, moderate or light saltiness, original taste, and mellow and refreshing taste. The noodle you order is dumpling noodle. Noodle is Yangchun noodle, and serve with pork vege dumpling. Yangchun noodle is a very popular and comforting breakfast noodle in Shanghai with an interesting name Yang Chun Noodles(阳春面). Basically it is served with a family recipe broth with soy sauce, chopped green onion, lard or sesame oil. Chinese cuisine is extensive and profound. Due to the differences in geography, climate, customs, and specialty products, various dishes with local flavors and characteristics have been developed, as well as corresponding cooking methods, forming cuisines with different local flavors, the most famous of which are eight kinds: Sichuan cuisine, Hunan cuisine, Cantonese cuisine, Fujian cuisine, Jiangsu cuisine, Zhejiang cuisine, Anhui cuisine and Shandong cuisine, collectively known as the eight major cuisines.
