Originally from Madrid, Paloma has always had a dream — to live in Denmark. She came here first as a student chasing that childhood goal, and somehow made it stick. Today, she’s building a life rooted in curiosity, creativity, and a deep love for delicious, unusual food. By day, Paloma is Head of Production at Endless Food Co., where she works on THIC™ (This Isn’t Chocolate) — a chocolate-like ingredient crafted to blend sustainability with deliciousness. Endless upcycles overlooked ingredients into exciting new flavours, and Paloma’s speciality is working with weird but wonderful things — from crickets to rescued produce. If it sounds strange and edible, she’s into it. She also keeps things running smoothly at Nest as their thoughtful and steady Head of Operations — part logistics wizard, part community glue. Outside of work, Paloma is a self-described cosy-at-home person who finds joy in the quiet rituals of life: cooking, baking, cleaning (yes, really), running, and savouring great food. She dreams of visiting as many countries as possible, loves tiny towns and peaceful nature, and has a soft spot for random documentaries and absolutely terrible movies. Her great loves?
