Start your day off right with our Head of Nourishment @isawelly’s go-to breakfast, Zucchini Bread ✨ ⁠

Not only is it yummy and oh-so-simple, it can be subbed in for your usual piece of toast making injecting some easy nutrition into your breakfast stack. Add some of your favourite sweet or savoury toppings for that Omega-3 brain-boost and you’re good to go! 🌱 🥑 ⁠

🌓 What’s in it?🌙⁠
2 cups of almond flour⁠
1 zucchini grated⁠
2 tbsp of tahini ⁠
4 eggs ⁠
3 tbsp baking powder⁠
¼ tsp of cinnamon⁠
¼ tsp of salt⁠

🌓 How to make it? 🌙⁠
✨ Grate the zucchini/courgette into a cheesecloth or table cloth then squeeze as much water out of it as you can and set it aside.⁠
In a bowl add the eggs, tahini, and mix well. Then before adding the zucchini, see if you can squeeze more water out of it! Mix it all well together.⁠
✨ In another bowl mix all the dry ingredients and stir well. Add dry ingredients to the zucchini mix. Stir it all well. ⁠
✨ Grease you baking pan and pour the bread mix. Bake in an oven 170c for 35min or until cooked.⁠
✨ Add topping – our faves; tahini withs sardines or anchovies, cream cheese (regular or cashew) or any nut butter with some chia seeds. ⁠
