Not long ago, we visited one of my absolutely favourite restaurants in the area. Michelin quality food experience run by chef Davide who only works with very local ingredients. He has the cleanest kitchen you have ever seen. 🤩 A Tuscan wood fired oven and a menu to die for. He explains the cooking with a passion that is contagious. He calls the kitchen a food lab because he loves to experiment with new ideas like fermentation and vegan alternatives. I brought a Swedish group of foodies there and they were all naturally amazed. 🥰 The property is beautiful and you get Davides full attention explaining the food and the wine and (if you want- we wanted it!) the process behind it. I wish everyone to find the passion in what they do the way Davide has because it shows and makes all the difference. 🥰 Having his family helping in the restaurant and Davides story in how he ended up there makes it extra special. #ilfornellocoliving #colivingitaly #umbria #dreamsofitaly #slowtravel #foodies

It takes time to truly get to know a place. Of course, we had been to @quintosapore before, but seeing how they’ve flourished is incredible. A brave stance for the climate. New ideas, with seeds that are stronger and more resilient. Exploring flavors in the kitchen, but also diving into research about the plant, how it works and how it grows. Even how it communicates. I’m so happy I brought people with me who wanted to learn and bring ideas back home. And I’m so glad I could show them the very best of Umbria. Left behind was a bottle of @lovesurstro that have kept on amazing the Italians everytime they have tried it. 🥰#ilfornellocoliving #quintosapore

We are trying to visit the neighbourhood as much as we can. Today I took a group to @poggiovalle 🥰. We started to milk the cow named Ida and then we went through the entire process of making cheese. I learned so much! We made it with edible flowers and it looked great! We also got to greet the animals at the farm and have an amazing lunch. Poggiovalle make their own flour and bread. They actually take everything from their own backyard into the Restaurant to leave a 0 km footprint. 🥰 that is pretty amazing! The local hospitality is just amazing and we were so well taken care of by Christiana, Julia, Fabrizio, the restaurant staff and of course the animals (especially Ida). I had to get some honey and olive oil, but also some marmalade that just tasted amazing!!

Today was one of those days I used to dream about when we created Coliving Italy. I took a long walk into Città della Pieve, sat at a magical café and worked for a while, then picked up local vegetables and mortadella. I also went to get some guests from a nearby vineyard, came back with a bottle of Canaiolo, and have now just settled into my armchair after an incredible meal. The vegetables came from Quinto Sapore, which has a small shop in the town center. I bought erbe di campo, which basically means “herbs from the field” a mix of wild Italian greens. I sautéed them with garlic and olive oil from Fontesecca, and added a piece of smoked chili quinto gave me… SO good! I had it with fresh asparagus and local mortadella from a butcher I just discovered here in Città della Pieve. I also got a sauce made from paté di talli di aglione, the stems of a special local garlic I’ve only ever found here. It’s life quality to be able to live like this on a completely normal workday. Now I have two more days like this ahead, with some digital lectures and panel talks during the day, combined with food experiences and guests in the evenings. #ilfornellocoliving #colivingitaly #quintosapore #poderefontesecca #cittadellapieve

Un séjour inoubliable à Il Fornello ! Rose et Iris nous ont accueillis avec une chaleur et une convivialité incroyables, créant une ambiance familiale et détendue. Le logement est très agréable et bien pensé : la cuisine partagée, la piscine et surtout le grand réfrigérateur privé ont rendu notre séjour très confortable. C’était aussi génial de rencontrer les autres voyageurs : l’ambiance était si conviviale que nous avons même créé une conversation ensemble pour garder contact après le séjour. Même si notre rencontre avec Umi et Mathilda a été courte, nous avons été touchés par leur investissement et leur énergie. Nous gardons de merveilleux souvenirs et envisageons déjà de revenir pour le Grape Festival en septembre prochain ! Merci encore pour votre accueil si chaleureux ! Deux petites suggestions : couvrir la pergola de l’espace commun pour éviter la pluie, et surveiller la légère odeur d’humidité dans la chambre. L’endroit évolue visiblement beaucoup, et nous avons hâte de découvrir les futures améliorations !

We had a wonderful company workation at Il Fornello, a real Italian countryside experience. Stina and her hosts was very warm and welcoming, together they made it easy to have a great time as a group. We got guidance on local venues and was able to both work and rest in the house.

I was really excited to stay here and very disappointed upon arrival. I booked for a month (which is the minimum) and stayed one night before leaving. The rooms are so dirty, I lay down and there was a scorpion in the bed. The shower was moldy and wouldn’t get hot. The rooms are also insanely hot. 35 degree weather and the rooms have no ac or even fans. No communal space. It was “under construction”. When I arrived other guests also complained that they had not had hot showers for weeks. There was also no one there when I arrived so I wandered around the building a while. When I requested a refund and offered to pay for a nightly fee, I was only offered 200 refund out of over 900. Really disappointed by the whole experience.

I fell in love with this place, thanks to Stina's exceptional organization and her genuine warmth. it's the perfect location if you want to explore both Tuscany and Umbria. During my stay, I formed meaningful friendschips. Stina has a wonderful eye for detail and takes care of the little things that make you feel instantly welcome and at ease. I think this place needs to be taken care of, a lot of things are not working well, first of all, the water doesn't stay hot, that happens to a lot of the rooms, the owner needs to fix this. Second, there is not indoor communal kitchen, only outdoor, it rained a lot where we are there, it's very tough to cook in the rain while so two stove tops are just not enough for the entire community. Third, our group stayed there two months, first month people just freeze in the coworking, only have way to the second month we were told by the handyman where to turn on the heaters attached to the walls. Fourth, the cleaning ladies did their bare minimum on the cleaning. There's a cute outdoor bar, but spider webs are accumulated daily, no one cleans them, so we didn't get to use it. For the entire Coliving there is only one washing machine, and we can only use it on the days other than the cleaning days, the cleaning ladies should have their own washer for the house, and the there should be at least two washer for the entire property to use. So many things are so broken or just never aim for real problem solving in this place, cabinets in the kitchen for instance, it will flew off everytime. There are just much weird stuff going on, and not the fun kind.

Had a wonderful 1-month stay at beautiful Il Fornello! Stina and her crew went above and beyond to accommodate us😁 As expected in an old country house/converted factory in the Italian countryside the place comes with its rustic charm and history! It’s a travel experience off the beaten path, allowing you to immerse in the local village and enjoy the slow country life. The house is perfect for digital nomads, and we enjoyed working from our spacious apartments, the outdoor kitchen, coworking space or by the pool☀️ Even though it feels remote and rural, the location is close to picturesque villages with plenty of great restaurants and major cities like Rome and Florence can be reached by train! I’d recommend staying here for anyone looking for a nice stay immersing in the italian countryside, and especially digital nomads and larger groups of families/friends looking to spend quality time in the many wonderful common spaces of the property!
